  1. Preheat oven to 200°C (390°F).
  2. Wash and cut the potatoes into wedges or cubes (keep the skin on for extra fiber).
  3. Toss them in a bowl with olive oil, salt, pepper, and rosemary.
  4. Spread them on baking paper and bake for 25–30 minutes, turning halfway.
  5. When crispy, sprinkle cheese on top and let it melt in the warm tray.
