Instructions:

  1. Heat oil in a large pan or wok.
  2. Add the chopped onion and carrot, and sauté for 3–4 minutes until soft.
  3. Push the veggies to one side and crack the egg into the pan.
  4. Scramble it quickly, then mix with the veggies.
  5. Add rice and soy sauce, and stir-fry everything together for 4–5 minutes.
  6. Taste and adjust salt or soy sauce.
  7. Serve immediately with parsley or Parmesan.
