Instructions:

  1. Beat the eggs in a bowl with salt and pepper.
  2. Chop the vegetables into small pieces.
  3. Heat oil in a pan, sauté the veggies for 2–3 minutes until soft.
  4. Pour in the eggs and tilt the pan so they spread evenly.
  5. Cook for 2–3 minutes, then flip (or fold in half).
  6. Serve warm: great with bread or potatoes.
