PESTO PASTA

  1. Cook the pasta according to the package instructions, then drain and set aside, reserving a little pasta water.
  2. In a food processor or blender, combine the basil, pine nuts, Parmesan cheese, garlic, and lemon juice (if using).
  3. While the processor is running, slowly add the olive oil until the pesto reaches a smooth consistency. Season with salt and pepper to taste.
  4. If the pesto is too thick, you can add a little reserved pasta water to loosen it up.
  5. Mix the pesto with the cooked pasta, tossing until the pasta is well coated.
  6. Serve the pesto pasta with an extra sprinkle of Parmesan and enjoy!
