VEGETABLE BOWL

A vegetable bowl is a wholesome, colorful dish that combines a variety of fresh, roasted, or sautéed vegetables, often paired with grains like quinoa or rice.   1. Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 20-25 minutes, or until tender and slightly crispy.
  2. While the sweet potatoes are roasting, steam the broccoli until tender, about 5-7 minutes.
  3. In a bowl, layer the cooked cous cous or quinoa or rice as the base.
  4. Arrange the roasted sweet potatoes, steamed broccoli, cherry tomatoes, avocado slices, chickpeas, and shredded carrots on top of the quinoa.
  5. Drizzle with tahini or your preferred dressing, and season with additional salt and pepper if needed.
  6. Serve immediately and enjoy your vibrant and nourishing vegetable bowl!
