VEGETERIAN CURRY

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until it’s soft and translucent, about 5 minutes.
  2. Add the garlic and ginger, and sauté for another 1-2 minutes until fragrant.
  3. Stir in the curry powder, cumin, and turmeric, cooking for 1 minute to toast the spices.
  4. Add the bell pepper, carrot, zucchini, and cauliflower. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  5. Pour in the diced tomatoes and coconut milk, stirring to combine. Add the chickpeas and season with salt and pepper.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the vegetables are tender and the flavors are well combined.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro, alongside rice or naan bread.
