QUINOA SALAD

This quinoa salad with crispy chickpeas and green dressing is a nourishing and refreshing dish, combining fluffy quinoa, crunchy roasted chickpeas, and a vibrant green dressing made from fresh herbs.   1. In a medium saucepan, combine the quinoa and water (or broth) and bring to a boil. Reduce heat, cover, and let simmer for 15 minutes or until quinoa is tender and water is absorbed. Remove from heat and let cool.
  2. While the quinoa cooks, preheat the oven to 400°F (200°C). Pat the chickpeas dry with a paper towel, then toss with olive oil, paprika, garlic powder, and salt.
  3. Spread the chickpeas on a baking sheet in a single layer and bake for 20-25 minutes, stirring halfway, until they’re golden and crispy. Set aside to cool.
  4. To prepare the green dressing, combine cilantro, parsley, olive oil, lemon juice, tahini, garlic, salt, and pepper in a blender or food processor. Blend until smooth, adding a little water if necessary to reach the desired consistency.
  5. In a large salad bowl, combine the cooled quinoa, mixed greens, cucumber, and cherry tomatoes.
  6. Top the salad with the crispy chickpeas and avocado slices. Drizzle with the green dressing, and gently toss to combine.
