TOMATO SOUP

  3. Stir in the crushed tomatoes and vegetable broth, mixing well. Add the dried or fresh basil.
  4. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.
  5. If desired, stir in the heavy cream or coconut milk for a creamier texture. Taste and add salt and pepper to taste.
  6. Use an immersion blender to puree the soup directly in the pot, or carefully transfer it to a blender to blend until smooth.
