VEGETERIAN MEATBALLS

Vegetarian meatballs are a delicious, plant-based alternative to classic meatballs, made with ingredients like beans, lentils, or vegetables. They’re tender, flavorful, and often seasoned with herbs and spices, offering a savory, satisfying bite. Perfect for serving with pasta, in a sub, or as an appetizer, vegetarian meatballs make a versatile, wholesome addition to any meal.

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the black beans or chickpeas with a fork or potato masher until mostly smooth, with some chunks for texture.
  3. Add the breadcrumbs, grated Parmesan (or nutritional yeast), onion, garlic, soy sauce, olive oil, Italian herbs, smoked paprika, salt, and pepper. Mix until everything is well combined and holds together when pressed.
  4. Scoop out about 1-2 tablespoons of the mixture and roll it into a ball. Repeat with the rest of the mixture, placing each ball on the prepared baking sheet.
  5. Bake for 20-25 minutes, turning the meatballs halfway through, until they are golden brown and firm to the touch.
  6. Remove from the oven and let cool slightly. Serve warm, garnished with fresh parsley, over pasta, in a sub, or with your favorite sauce.
