STUFFED PEPPERS

Stuffed peppers are a vibrant, satisfying dish featuring bell peppers filled with a savory mixture of grains, vegetables, herbs, and sometimes cheese or beans.   1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the peppers.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in the baking dish.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until soft, about 3-4 minutes.
  4. Add the garlic and cook for another 1-2 minutes until fragrant.
  5. Add the diced zucchini, cooking for about 5 minutes until it starts to soften.
  6. Stir in the cooked quinoa or rice, black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Cook for 5 more minutes, stirring until everything is heated through and well combined.
  7. Spoon the filling into each bell pepper, pressing it down gently to fit as much filling as possible.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil, sprinkle the tops of the peppers with cheese (if using), and bake uncovered for another 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
  10. Remove from the oven and let cool slightly. Garnish with fresh cilantro or parsley before serving.
