ZUCCHINI FRITTERS

Zucchini fritters are light, crispy, and full of fresh flavor, making them a deliciously simple way to enjoy this versatile vegetable. Grated zucchini is mixed with herbs and a touch of seasoning, then pan-fried to golden perfection, resulting in fritters that are crispy on the outside and tender on the inside.   1. Grate the zucchinis and place them in a colander. Sprinkle with salt, toss, and let sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze out excess water from the zucchini using a clean kitchen towel or paper towel until it’s as dry as possible.
  3. In a large mixing bowl, combine the grated zucchini, flour, Parmesan, beaten egg, green onions, black pepper, and parsley (if using). Mix well until evenly combined.
  4. Heat a few tablespoons of oil in a large skillet over medium heat. Scoop about 2 tablespoons of the zucchini mixture for each fritter, flattening slightly in the pan.
  5. Fry the fritters for 2-3 minutes per side, or until golden brown and crispy. Transfer to a plate lined with paper towels to absorb excess oil.
  6. Serve warm with a dollop of yogurt or sour cream, if desired.
