  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with oil.
  2. In a large bowl, whisk together the dry ingredients: whole wheat flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).
  3. In another bowl, mash the bananas until smooth. Add the applesauce, melted coconut oil, eggs, vanilla extract, and milk. Whisk until well combined.
  4. Pour the wet ingredients into the bowl of dry ingredients and gently mix until just combined. Avoid over-mixing, as this can make the muffins dense.
  5. Fold in the chopped nuts and blueberries, if using, for added flavor and texture.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
