  1. In a blender or food processor, combine the rolled oats and blend until they reach a flour-like consistency.
  2. Add the ripe banana, almond milk, baking powder, cinnamon, salt, egg, and vanilla extract to the blended oats.
  3. Blend until smooth and well combined. Let the batter rest for about 5 minutes.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  7. Flip and cook for another 1-2 minutes until golden brown.
  8. Repeat with the remaining batter, adjusting the heat as needed.
  9. Serve warm with your choice of toppings, such as fresh fruit or nuts.
