  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. If using cooking spray, lightly coat the skillet.
  3. Pour the egg mixture into the skillet, tilting the pan to spread it evenly.
  4. Cook for 2-3 minutes until the edges begin to set, then gently lift the edges with a spatula, allowing uncooked egg to flow underneath.
  5. Add the diced vegetables and cheese (if using) to one half of the omelette.
  6. Once the eggs are mostly set but still slightly runny on top, carefully fold the omelette in half over the fillings.
  7. Cook for an additional minute until the eggs are fully cooked and the cheese has melted.
  8. Slide the omelette onto a plate, garnish with fresh herbs if desired, and serve immediately.
